Coffee and mascarpone truffles: one leads to another! π

INGREDIENTS
300g dry biscuits
60g sugar
250g mascarpone
3 cups of coffee (50ml each)
1 tsp of instant coffee
Bitter cocoa to taste
METHOD
1. Prepare the coffee and let it cool.
2. Finely chop the biscuits using a mixer.
3. Pour them into a large bowl together with the cups of coffee, instant coffee, mascarpone and sugar.
4. Mix the ingredients with a spoon until you obtain a workable and homogeneous dough.
5. Form balls of about 15g each.
6. Pass them one at a time in a bowl filled with bitter cocoa so as to line them well.
7. Arrange them on a plate/tray slightly spaced apart from each other.
8. Place them in the fridge to firm up for at least an hour.
