INGREDIENTS
500g mascarpone cheese

4 egg yolks
For the syrup:
40ml water
120g sugar

METHOD
1. Mix water and sugar and bring the syrup up to 121°C (250°F).
2, Meanwhile, start to whip up the egg yolks with sugar, then pour the syrup over the egg yolks and keep whisking.
