Cassata brioche: the Italian recipe you'll fall in love with!

INGREDIENTS
500g Flour 0
170g Milk
1 tbsp sugar
1 tsp Salt
60g Butter
15g Beer yeast
80g Orange juice
1 grated orange
1 Egg
1 egg to brush
Powdered sugar For the stuffing
250g Fresh ricotta cheese
3 tbsp Powdered sugar
3 tbsp of whipping cream
1 grated orange
METHOD
- Boil milk, sugar and butter. In a separate bowl, whisk the yeast in warm milk and leave for 15 minutes. In the milk mixture, grate the orange, add the juice of one squeezed orange, then add the yeast mixture and one egg, mix. Add the flour, and roll into a fine paste, cover with foil for 2-3 hours
- Charging
- Combine ricotta cheese and sugar, as well as whipped cream, mix all, then add chocolate chips
- Divide the dough into 12 balls and leave a piece of dough to decorate the surface of the basket.
- In each of the balls make a recess and fill with prepared cream. Then coat them with egg and decorate with thin strips, the procedure as in the video.
- Bake at 180 degrees, 25 to 30 minute
