Choux pastry and cream treats: the Italian recipe you'll fall in love with!

INGREDIENTS
1 cup flour;
½ tsp salt;
1 tsp sugar;
1 cup milk;
½ cup butter;
4 eggs;
1 package vanilla pudding;
2 cups milk;
2 cardamom pods, 2 cloves;
cherries, powdered sugar for serving.
METHOD
- Boil water, sugar, butter and salt together until the butter completely melts down.
- Add flour into the mixture and stir quickly to form a smooth, buttery dough.
- Transfer the dough into a bowl and start whisking in eggs one at a time.
- Fill the pastry bag with the dough and form zeppolas on a parchment-covered baking sheet.
- Place into preheated (200C/400F) oven for 30-35 minutes.
- Make a quick pastry cream by whisking vanilla pudding with some cold milk (follow package instructions).
- Boil leftover milk with cloves and cardamom, remove spices and combine spicy milk with the pudding mixture. Boil until thick and leave to cool down completely. Put in a pastry bag.
- Top cooled zeppolas with cream and cherries and dust with powdered sugar before serving.
