Choux pastry and cream treats: the Italian recipe you'll fall in love with!

INGREDIENTS
 1 cup flour;
 ½ tsp salt;
 1 tsp sugar;
 1 cup milk;
 ½ cup butter;
 4 eggs;
 1 package vanilla pudding;
 2 cups milk;
 2 cardamom pods, 2 cloves;
 cherries, powdered sugar for serving.
 
METHOD
  1.  Boil water, sugar, butter and salt together until the butter completely melts down.
  2.  Add flour into the mixture and stir quickly to form a smooth, buttery dough.
  3.  Transfer the dough into a bowl and start whisking in eggs one at a time.
  4.  Fill the pastry bag with the dough and form zeppolas on a parchment-covered baking sheet.
  5.  Place into preheated (200C/400F) oven for 30-35 minutes.
  6.  Make a quick pastry cream by whisking vanilla pudding with some cold milk (follow package instructions).
  7.  Boil leftover milk with cloves and cardamom, remove spices and combine spicy milk with the pudding mixture. Boil until thick and leave to cool down completely. Put in a pastry bag.
  8.  Top cooled zeppolas with cream and cherries and dust with powdered sugar before serving.
