Stuffed tomatoes: the fresh recipe ready in no time!

This makes a perfect treat in the morning or a delicious dinner. Healthy, fancy and tasty... and super easy too!

INGREDIENTS
3 tomatoes
3 eggs
50g (1.7oz) Mozzarella
18g (3 tbsp) green onion, chopped (divided)
15g (3 tsp) mayonnaise
60g (1/3 cup) cheese, shredded
Salt to taste
Black pepper to taste
15 ml (1 tbsp) olive oil (for greasing)

METHOD
  1.  Prepare the tomatoes: cut a thick slice off the top of each tomato (reserve the top slices). Carefully cut and spoon out the flesh.
  2.  Slice Mozzarella into 3 thick slices, just big enough to fit in the tomato.
  3.  Place some chopped green onion on the bottom of each tomato and top with a slice of cheese.
  4.  Grease a baking dish with olive oil and arrange reserved top slices inside (skin side up). Place each tomato on top of its top slice.
  5.  Crack an egg into each tomato. Season with salt and pepper, sprinkle with some more onion, add mayo and top with shredded cheese.
  6.  Bake in the pre-heated to 200C/392F oven for 25 minutes.
  7.  Serve immediately!
