Stuffed tomatoes: the fresh recipe ready in no time!

This makes a perfect treat in the morning or a delicious dinner. Healthy, fancy and tasty... and super easy too!
INGREDIENTS

3 tomatoes
3 eggs
50g (1.7oz) Mozzarella
18g (3 tbsp) green onion, chopped (divided)
15g (3 tsp) mayonnaise
60g (1/3 cup) cheese, shredded
Salt to taste
Black pepper to taste
15 ml (1 tbsp) olive oil (for greasing)
METHOD
- Prepare the tomatoes: cut a thick slice off the top of each tomato (reserve the top slices). Carefully cut and spoon out the flesh.
- Slice Mozzarella into 3 thick slices, just big enough to fit in the tomato.
- Place some chopped green onion on the bottom of each tomato and top with a slice of cheese.
- Grease a baking dish with olive oil and arrange reserved top slices inside (skin side up). Place each tomato on top of its top slice.
- Crack an egg into each tomato. Season with salt and pepper, sprinkle with some more onion, add mayo and top with shredded cheese.
- Bake in the pre-heated to 200C/392F oven for 25 minutes.
- Serve immediately!
