Jalapeño poppers: a fabulous appetizer for any kind of occasion or gathering!

Crispy and delicious, this is the best homemade appetizer ever!
INGREDIENTS

4 jalapeños
3-4 slices white bread
4g (1/4 cup) chopped cilantro
60ml (1/4 cup) milk
1 egg
125g (1 cup) all purpose flour
60g (1/2 cup) shredded mozzarella
60g (1/2 cup) shredded swiss cheese
60g (1/2 cup) shredded jack cheese
sea salt and black pepper to taste
Vegetable oil (for frying)
METHOD
- Place cilantro and white bread slices into a food processor and mix on high until crumbled. Transfer onto a baking tray and bake at 350F/175C for 10-15 minutes.
- In a bowl combine shredded mozzarella, Swiss and jack cheese.
- Prepare jalapeños: make a T-shape cut on jalapeño, so you can open it. Take the seeds and veins out. Continue with the remaining jalapeños.
- Stuff each jalapeño with a cheese mixture.
- Set up a breading station: In a bowl mix flour with salt and pepper; in another bowl lightly beat an egg with 1/4 cup of milk and a pinch of salt and pepper.
- Coat each jalapeño in flour, then dip in egg mixture and coat in the prepared bread crumbs. Dip coated jalapeño in egg mixture again and then coat in breadcrumb one more time. Make sure you have a thick coating. Continue with the remaining jalapeños.
- In a small pan heat vegetable oil over medium heat until hot (325F/162C). Fry jalapeños for 5 minutes or until golden.
- Put fried jalapeños on a baking tray lined with paper towels to blot off any excess oil. Bake them for 5-7 minutes in a preheated to 350F/175C oven.
- Take your jalapeño poppers out of the oven and serve immediately!
