Cod croquettes: the recipe to prepare them to perfection

Ingredients:
300 gr of cod
70 g of butter
70 grams of flour
700 ml of milk
1 tablespoon of extra virgin olive oil
50 gr of chopped or grated onion
Fresh parsley
1 pinch of ground pepper and nutmeg
Eggs and breadcrumbs for topping
Fry oil
Directions:
1. Sauté the onion in the oil, then add the cod and sauté.
2. Set the cod aside.
3. Melt the butter and combine the flour, milk, pepper and nutmeg.
4. Add the cod and parsley, cook together.
5. Leave the mixture to cool for an hour.
6. Shape the croquettes and pass them in the egg and breadcrumbs.
7. Fry in hot oil and serve.
