Creamy potatoes: the recipe for a quick and tasty side dish

Ingredients:
600 g of potatoes
Half a onion
2 garlic cloves
1 tbsp of tomato paste
300 ml of vegetable broth
180 ml of cooking cream
80 g of diced ham
Peppers
Curry
Salt and pepper
Fresh parsley
Directions:
1. After carefully washing them, cook the potatoes in hot boiling water.
2. When they're soft on the inside, take them off the pan and let them cool.
3. In a pan heat some olive oil, then fry chopped garlic and onion.
4. When they're golden, add tomato paste and vegetable broth.
5. Season with curry. Then pour in the cream.
6. Season with salt and pepper, then mix with a hand blender.
7. Peel the cooked potatoes and cut them in big pieces.
8. Put the cream into a pan and mix with the potatoes.
9. Cook for 2 to 3 minutes at medium heat, including diced ham.
10. Serve with some chopped fresh parsley on top.
