Mini meatloaf with sun-dried tomatoes: the tasty and inviting recipe

Ingredients:
1 onion
Olive oil
Salt and pepper
2 bull peppers
650 g of beef meat
2 eggs
Spring onion
Fresh parsley
50 g of grated cheese
100 g of sun-dried tomatoes
200 g of mozzarella
100 g of bread crumbs
Directions:
1. Coarsely chop the onion and fry it in a pan with some olive oil. Add salt too.
2. Mix diced bull pepper.
3. After that, cut the meat in pieces and grind it using a blender.
4. Add eggs, black pepper, chopped spring onion and parsley and grated cheese. Lastly, mix in the cooked onion and pepper.
5. Mix well to combine all the ingredients.
6. With your hands make the mini loaf shape and fill them with sliced mozzarella and sun-dried tomatoes.
7. Coat the mini loaf with bread crumbs.
8. Then fry them in a pan with some hot oil until they're golden, and place them in a baking tray.
9. Bake at 200 degrees for 30 minutes.
