Tomato mini focaccias: delicious and easy to make

INGREDIENTS
520g (4 1/4 cups) of all-purpose flour
7g of fresh yeast
320ml (1 1/4 cups) of milk
15g (1 tbsp) of salt
Olive oil
Cherry tomatoes
Dry oregano
METHOD
1. In a bowl with flour add the fresh yeast, milk, and salt and mix with a wooden spoon. When the dough starts to form knead it with hands until smooth.
2. Add a drizzle of olive oil over the dough and continue kneading until the dough absorbs oil. Cover with cling film and let it rise for 2 hours, or until is double in volume.
3. After time has elapsed transfer the dough to the working surface and split it into 8 pieces (about 100 grams each piece). Roll out each ball and press it with your fingers.
4. Transfer to the baking tray covered with parchment paper and cover with cherry tomatoes. Sprinkle with dry oregano and with olive oil.
5. Transfer to the oven and bake at 190°C/374°F for 15 minutes, or until the mini pizzas are golden brown.
