Lemon and mascarpone cake: the recipe for an elegant and delicious dessert

Ingredients:
- For the cake batter:
4 eggs
120 g of sugar
30 g of vegetable oil
1 tsp of lemon zest
120 g of flour
4 g of baking powder
- For the lemon cream:
135 g of lemon juice
1-2 tsp of lemon zest
190 g of sugar
3 eggs
10 g of corn starch
- For the mascarpone cream:
200 g of mascarpone cheese
80 g of powdered sugar
1 tsp of vanilla extract
- For the syrup
100 g of water
60 g of sugar
1 tsp of vanilla extract
15 g of lemon juice
Directions:
1. In a bowl mix lemon juice, lemon zest and vegetable oil.
2. Aside, mix the powders (flour and baking powder).
3. Whip the egg whites with electric whisks. While mixing add sugar gradually.
4. Mix in the yolks too, the add in the powders after sifting them.
5. Lastly, add the lemon mix from before.
6. Pour the batter in a cake pan (20 cm diameter) with some baking powder on the bottom.
7. Bake in a pre-heated oven at 160 degrees for 35 minutes.
8. Now make the lemon cream, mixing lemon juice, eggs, lemon zest, corn starch and sugar in a saucepan.
9. Blend all the ingredients and then cook the mix at the lowest setting and mix continuously until it thickens.
10. Sift the cream, cover it with some plastic wrap and let it cool.
11. For the mascarpone cream, whip the cream. Then add in powdered sugar, mascarpone cheese and vanilla extract.
12. Refine the cake by cutting off the first superficial layer then divide it into three equal parts.
13. Wet the cake layers with a syrup made by mixing sugar, water and lemon juice.
14. Assemble your dessert now by alternating wet cake layers, mascarpone cream on the edges and lemon cream in the middle.
15. Use the mascarpone cream to cover the outside of the cake too.
16. Let cool in the fridge for 6 hours, then decorate the cake alternating mascarpone cream and lemon cream (using a piping bag).
17. For the cake edges use the cake scraps to create a powder and make it adhere to the edges.
