Caramel and chocolate mousse cake: the recipe for a delicious dessert

Ingredients:
- For the batter
3 eggs
80 g of sugar
A pinch of salt
30 ml of vegetable oil
50 ml of milk
80 g of flour
20 g of cocoa powder
1 tsp of baking powder
- For the caramel
150 g of sugar
70 g of butter
A pinch of salt
110 g of cream
- For the mousse
100 g of dark chocolate
100 g of milk chocolate
100 g of warm cream
60 ml of milk or water
10 g of instant gelatin
350 g of cold cream
- For decoration
150 g of milk chocolate
30 g of vegetable oil
Directions:
1. Whip the eggs and the sugar with a pinch of salt until you get a fluffy and light batter.
2. Add in the oil and keep on mixing.
3. Aside, mix flour, cocoa powder and the baking powder. Blend well, then sift them and add to the previous mix.
4. Pour the batter into a round cake pan (20 cm of diameter) and bake in a pre-heated oven at 180 degrees for 25-30 minutes.
5. When it's ready, level the cake cutting off the superficial layer and then divide it in three equal parts.
6. Make the caramel pouring the sugar in a saucepan and cooking it a medium setting. When it's melted add in cold butter.
7. Lastly, add in the cream and a pinch of salt.
8. For the mousse, melt the chocolate into warm cream and blend well.
9. Now make the gelatin letting it sit in water or milk for 10 minutes.
10. Whip the cream and add in the chocolate mix and blend well. Now add in the gelatin too.
11. Assemble the dessert alternating cake layers wet with some milk and layers of chocolate mousse and caramel.
12. Let cool the cake in the fridge for 4/6 hours.
13. Decorate the cake with a glaze made with milk chocolate and vegetable oil.
