Chocolate mousse cheesecake: a very delicacy ready in no-time!

A no-bake cake you must try!
Ingredients:
Ingredients:
For the mousse:
180 g (6 oz) dark chocolate;
1 1/3 cup full-fat cream;
1 tsp instant coffee;
1 tbsp honey;
a pinch of salt.
For the crust:
150 g (5 oz) cashews;
70 g (2.4 oz) dark chocolate;
30 g (1 oz) honey;
a pinch of salt.
For the ganache:
120 g (4 oz) dark chocolate;
120 g (4 oz) full-fat cream.
METHOD
- For the crust blend roasted cashews, combine cashew powder with melted dark chocolate, honey and salt until thick and smooth paste forms.
- Spread the crust mixture over the bottom of 20 cm (8 inches) baking pan, lined with parchment. Let sit in the freezer for 30 minutes.
- For the mousse heat 1/3 of cream and pour it on top of the chocolate. Let sit for a minute, then stir until smooth ganache forms.
- Add instant coffee and honey. Whip leftover cream and stir the chocolate mixture in.
- Spread mousse on top of chilled crust.
- For the ganache pour hot cream over the chocolate and let sit for a minute. Stir until smooth ganache forms, let it cool down a little and then spread over the mousse layer.
- Let the cake chill in the fridge for 3 hours.
