Homemade ciabatta bread: how to make it soft and fragrant

Ingredients:
- For the pre-dough:
250 g of water
1 g of dry brewer's yeast
250 g of flour
1 g of salt
- For the dough:
500 g of flour
5 g of powder malt (or 10 g of honey)
4 g of dry brewer's yeast
400 g of olive oil
Directions:
1. Make the pre-dough by mixing water and yeast. Then add thix mixture into the flour. Lastly, add salt.
2. Cover and let rise for 20 hours.
3. Now make the dough by mixing flour, yeast, the pre-dough you made before and water (divided into three parts).
4. Knead until all the ingredients are blended.
5. Let rest for 15 minutes then knead again.
6. Let rise the dough into an oiled container for 1 hour and a half.
7. After that, fold the dough and let rise again.
8. Sprinkle some flour onto your work surface and on top of the dough, then make a loaf.
9. Divide it into equale parts and place them on a baking tray.
10. Let rest for 30 minutes.
12. Then bake in a pre-heated oven: first at 230 degrees for 10 minutes, then at 200 degrees for 15 minutes.
