Apple cookies: how to make them friable and delicious

Ingredients:
2 apples
2 spoons of sugar
Cinnamon
Juice of 1 lemon

Shortcrust pastry:
1 egg
80 gr sugar
80 ml seed oil
250 gr flour

Directions:
Cut the apples into cubes and cook them in a pan with sugar, cinnamon and lemon juice.
Shortcrust: mix egg and sugar in a bowl, then add oil and flour. Make a soft dough and roll it out. Divide into two portions and form the biscuits. Bake at 356°F (180°) for 20 minutes.
