Apple cookies: how to make them soft and fragrant!

This is not the usual method!
INGREDIENTS
200g (1 cup) of cottage cheese
300g (2 1/2 cups) of flour
200g (1 cup) of butter
13g (1 tbsp) of sugar
5g (1 tsp) of baking powder
3 apples
Apricot jam
Cinnamon
Powdered sugar
METHOD
1. In a food processor add the cottage cheese, flour, butter, sugar, and baking powder and mix until all is well combined.
2. Transfer the mixture to a plate covered with cling film and thought it well to obtain the dough. Cover on all sides and transfer to a fridge for 1 hour.
3. Meantime remove the middle from the apples and cut on slices.
4. After time has elapsed transfer the dough to the working surface and roll it out with the rolling pin.
5. With the round mold (8cm size) prick the rolled dough and remove the rest of the dough.
6. Spread the apricot jam, sprinkle with a lot of cinnamon and arrange the apple slice on each one. Close them and transfer them to the baking tray covered with parchment paper.
7. Bake the cookies in the oven at 180°C/360°F for 40 minutes. Decorate with powdered sugar.
