Homemade croissant: the easy way to prepare them

Ingredients:
For 10 croissants:
500 gr Manitoba flour
200 gr milk
50 gr sugar
20 gr honey or malt
100 gr eggs
70 gr butter
10 g salt
30 gr brewer's yeast
Aromas
250 gr butter
Directions:
Start mixing milk, eggs, flavors and yeast. Then add the honey.
At this point add the mixture to the flour and let it absorb. Then add salt and butter into chunks. Form a loaf and leave to rise for 2 hours in the fridge. In the meantime, roll out the butter and form a square.
Roll out the dough, insert the butter and make the folds.
Then put in the fridge for 15 minutes. Then redo the 3 folds. Repeat the same procedure one last time.
Then roll it out and form the croissants, let them rest for 2/3 hours.
Then brush some milk and yolk and bake at 340°F (170°) for 10/15 minutes.
