Crumb apple cake: the recipe to make it perfect

Ingredients:
Shortcrust pastry:
300g of flour 00
150g of butter
16g of vanilla yeast
100g of sugar
1 egg and 1 yolk
Filling:
3 apples
50g of sugar
2 tablespoons of cinnamon
6 tablespoons of apricot jam (optional)
Directions
Cut the apples into cubes and put them in a pan. Then add cinnamon, sugar and water. Cook for 15 minutes and set aside.
Shortcrust: mix flour, baking powder and butter. Then add sugar, egg and yolk. Make the mixture sandy.
Assemble the crumb and bake at 356°F (180°) for 40 minutes.
