Cloud omelette: the secret to make a super fluffy frittata!

This is the best way to cook eggs!
INGREDIENTS
• 2 eggs
• 2 tbsp water
• salt
METHOD
- Separate the yolks from the whites, add salt.
- Beat egg whites until stiff. Whisk 2 tablespoons of hot water in the yolks. Beat.
- Pour the yolks into the pan. Cover and cook for a minute over medium heat.
- After a minute, put the egg whites on the yolks, flattening with the kitchen spatula. Cover and cook over medium heat for 5 minutes.
- Place the finished omelet on a dish and close in half.
