INGREDIENTS

400ml (1 2/3 cups) milk

1 vanilla bean

100g (½ cup) sugar

3 egg yolks

40g (1/3 cup) cornstarch

1 roll of rectangular puff pastry

Milk, as needed

Granulated sugar, as needed

METHOD

1. Pour the milk and the vanilla bean, previously split in half, into a saucepan.

2. Heat on the stove, stirring occasionally. It doesn't need to boil. Let it cool slightly.

3. In a large bowl, combine the egg yolks and sugar, whisking until the mixture is pale.

4. Add the sifted cornstarch, mixing until incorporated.

5. Remove the vanilla bean from the now lukewarm milk.

6. Gradually add the milk to the egg and sugar mixture, straining it through a sieve, and mix until smooth.

7. Pour the cream into a saucepan and boil, stirring continuously with a whisk. Cook for 3 minutes from the start of boiling.

8. Remove the cream from the heat, cover with plastic wrap, and let it cool.

9. Cut the puff pastry into 3 sheets using a wheel or knife, prick with a fork, brush with milk, and sprinkle with granulated sugar.

10. Bake at 180°C for about 10 minutes or until golden. Let cool.

11. Trim the edges of the baked puff pastry.

12. Assemble the mille-feuille by distributing the cream with a piping bag, and decorate with powdered sugar.
