2 amazing recipes with corn!

Cornbread

INGREDIENTS
• 3/4 cup flour
• 1 1/4 cups corn flour
• 1/2 tsp baking soda
• 1/2 tsp salt
•1/2 cup butter, melted
• 1/2 cup sugar
• 2 eggs
• 1 cup buttermilk

METHOD
1. Preheat the oven to 180°C/350°F. Grease a 8x8' pan.
2. Mix the flour, corn flour, soda and salt. Set aside.
3. In another bowl, beat sugar and butter, then add 2 eggs and beat smooth. Add in buttermilk.
4. Add dry ingredients to the wet, and mix together.
5. Pour the dough into the pan, then bake for 35-40 minutes

Fried corns

INGREDIENTS
•1 cup sweet corn
•  2 tbsp Cornstarch
• 1/2 tsp Salt
• 1/2 tsp chili powder
• Vegetable oil
• 2 Green chilies, chopped
• 1 tbsp coriander
• 1/2 tsp Lemon juice
 
METHOD
1. Cook corn in the boiling water for 5-6 minutes.
2. Drain the corn and add cornstarch, paprika, salt. Mix all ingredients well until sweet corn is well covered.
3. Heat the oil in the pan. Once really hot, add the sweet corn. Fry the sweet corn for 3 minutes.
4. For the garnish, add finely chopped green chili peppers, green coriander and black pepper. Drizzle wit lemon juice.
