Crab Cream Croquette: crispy and crunchy

Ingredients:
250g crab meat
1 onion
120g unsalted butter
100g flour
600ml milk
taste with salt and pepper
flour
1-2 eggs
bread crumbs
oil to fry
Directions:
Chop the onion and crabmeat to shred. Add the butter to a frying pan and melt it. Add chopped crab, onion and fry it. Add salt and pepper and mix. Another pan, add the butter(120g) and melt it. Add the flour and mix well. Add the milk, then the fried crabmeat, onion and taste with salt & pepper. Pour the sauce into a square pan with plastic wrap. Chill well in the refrigerator. If the cream filling is soft it will become easy to handle after about an hour in the refrigerator. When it's cooled and easy to handle, score the surface into 15 to 20 portions. coat flour, eggs and bread crumbs and fry it until it gets golden.
