Fried or baked doughnuts recipe: 2 delicious versions

Fried doughnuts:
2 eggs
420g all-purpose flour
pinch of salt
25g fresh yeast
50g butter
70g sugar
50ml milk
300g boiled potatoes
Vanilla extract (optional)
Orange peel, grated
Directions:
Start preparing the dough with sugar, milk and yeast (dissolved in a little water). Then add flour, butter and orange peel. Finally add the eggs and boiled potatoes previously. Continue the preparation by hand and then put the dough to rise until doubling the volume. Then form balls, roll them out and give the shape of the staples. Let rise again 30/60 minutes and then fry them. Coat in the sugar and enjoy these fantastic doughnuts.

Ingredients for the leavening:
100 g flour
100 ml of milk
10 g of fresh yeast
1 tablespoon sugar
Ingredients for the dough
poolish
400g all-purpose flour
150ml milk
2 eggs
60g sugar
60g butter
vanilla flavor
lemon zest
pinch of salt
Directions:
After preparing the dough, make circles with an 8 cm coppapasta or alternatively with a cup; make a hole in the center with a smaller food ring mold or even with a plastic bottle cap. Let rise for an hour and a half, then bake in a static oven at 180°C (360°F) for 15 minutes; finally cover with powdered sugar and your soft doughnuts are ready to be enjoyed.
