Fried mini donuts: the simple method to make them fluffy and yummy

Ingredients:
250 g. 00 flour
250 g. of flour 0
75 g. sugar + q.s. to sprinkle on top
10 g. of brewer's yeast or 1 sachet powder
80 g. of butter
125 ml. of water
125 ml. of milk
a pinch of salt
the grated rind of a lemon
Directions:
Dissolve the yeast in the milk and water, pour it into the two flours.
Then add sugar, lemon zest, melted butter and salt.
Start mixing everything and form a homogeneous dough. Let it rise for 2 hours, then roll it out and form the donuts. Let them rest for an hour and fry them in hot oil. Then pass them in sugar.
