Mafrum: an easy recipe!

INGREDIENTS
5 potatoes peeled
1 cup flour
2 eggs
For the filling
1lb. ground beef
1/2 cup parsley, chopped
2 eggs
1 onion, chopped
1/3 cup breadcrumbs
1/4 tsp. cinnamon
1/4 tsp. cumin
2 tsp. paprika
salt and pepper to taste
2 tbsp. oil for frying
For the sauce
1 tbsp. cooking oil
2 cloves garlic, chopped
2 tbsp. paprika
1/3 cup tomato paste
2 cups water
3 tomatoes, chopped
1 onion, chopped
Salt and pepper to taste
METHOD
Cut potatoes into 1/2 inch (1.25 cm) thick wedges.
Cut into each wedge to make a V shaped potato
In a mixing bowl add all the meat filling ingredients and mix well with hands.
Take a ball of meat and stuff into the potatoes.

Roll the stuffed potatoes in flour, then in egg and fry them in a pan on all sides.
Make the sauce by adding oil to pot on medium heat, then add garlic, paprika, tomato paste and water. Stir. It is now time to add tomatoes, onions, salt and pepper. Stir it well and add potatoes, cover and cook on low heat for 45 mins.
Serve on a bed of rice and garnish with fresh parsley.
