Easy sausage breakfast: a tasteful recipe easy to prepare!

Mix all the ingredients and let's make the most delicious breakfast dish ever! 

INGREDIENTS
 200g (5 cups) fresh spinach;
 1 large (2 cups) potato, boiled, peeled and cubed;
 8 sausages, sliced;
 70g (¾ cup) cheese, shredded;
 8 eggs;
 60ml (¼ cup) cream;
 Cherry tomatoes;
 Shredded mozzarella for topping;
 Salt and pepper.
 
METHOD
  1.  In an empty pan cook sausages over medium-low heat until golden and crispy (around 5 minutes).
  2.  Remove sausages from the pan and use rendered fat to wilt up spinach in it.
  3.  Combine spinach, sausages, potatoes and cheese in a baking pan.
  4.  Whisk eggs with cream, salt and pepper.
  5.  Pour egg mixture over the filling. Sprinkle with some shredded cheese and add cherry tomatoes on top.
  6.  Bake at 190C/375F for 45 minutes.
