Polacca Aversana: A Typical Italian Dessert With Custard

Ingredients:
300g Manitoba flour
200g all-purpose flour
100g sugar
120g Butter
200ml milk
4g active dry yeast
2 eggs
pinch of salt
600g Custard
Directions:
Prepare the dough: sift the manitoba flour and the all -purpose flour, add baking powder, milk and sugar and mix. Then add the eggs and mix for about 3 minutes. Add salt and butter. Knead the dough with a little flour and shape a ball. Allow to rise for at least 2 hours, then divide the dough into two parts and spread it. Pour the custard onto the dough, add the black cherry and cover with the second layer of dough and seal the edges. Brush the surface with the yolk, add pearl sugar and bake at 180°C (360°F) for about 30 minutes.
