Eggplant roll-ups: a quick, tasty side dish

Ingredients:
2 large eggplants (700g)
80g ham
200g mozzarella
50g grated cheese (30g stuffing, 20g to spread on the rolls)
2 tablespoons extra virgin olive oil
1 tablespoon bread crumbs
Salt and Pepper To Taste
Parsley and basil to taste
1 clove of garlic
Directions:
Cut the eggplant into slices and grill. Then prepare the filling by chopping ham, mozzarella, basil and parsley. Mix together and add the cheese. Cover each slice and roll it up. Put the rolls in a pan and cover with the cheese. Bake at 200°C (400°F) for 20 minutes.
