Soft orange carrot cake

Ingredients:
200g all-purpose flour
250g carrots
200g sugar
3 eggs
1 grated orange zest
1 orange juice
150g seed oil
pinch of salt
2 teaspoons baking powder
 
Directions:
Peel the carrots and cut them into pieces. Place in the blender along with the seed oil and blend until a cream of carrots is obtained. In a bowl, beat the eggs and sugar, add the carrot cream and mix well. Add the grated peel, the previously sifted flour and mix the ingredients well for a few minutes. Combine the baking powder and the orange juice, then mix. Pour the carrot mixture into a bowl, preheat oven to 180°C (360°F) and bake for 45 minutes.
