Orange soft roll: moist and delicious, you will fall in love with this dessert!

A soft, fragrant brioche, perfect for your breakfast!
INGREDIENTS
INGREDIENTS
1 orange, sliced;
3 tbsp sugar;
4 eggs, separated;
60 g (2 oz) sugar;
60 g (2 oz) flour;
3 tbsp orange juice;
2 tbsp vegetable oil;
2 tsp baking powder;
½ tsp orange extract;
3 tbsp cream cheese;
½ pound ricotta;
2 tbsp powdered sugar;
orange jam.
METHOD
- Sprinkle orange slices with 3 tbsp of sugar and let caramelize over low heat for 10 minutes.
- To make the sponge beat egg whites with sugar until soft peaks.
- Separately whisk egg yolks, orange juice, oil, orange extract until pale and fluffy.
- Add baking powder and flour into the yolks and fold egg whites in.
- Layer caramelized orange slices on a baking sheet. Pour the batter over and bake at 180C/350F for 12-13 minutes.
- Let the sponge cool down and meanwhile make simple cheese cream by combining cream cheese, ricotta and powdered sugar together.
- Spread a thin layer of orange jam on top and cover with ricotta cream. Carefully roll the sponge and leave to set in fridge for 2-3 hours.
