Tall, soft cake: every slice is a burst of flavor

Ingredients:
250g flour
250g sugar
5 whole eggs
25ml seed oil
50g water
8g baking powder
1 teaspoon vanilla extract
Grated zest of a lemon
pinch of salt
Directions:
Divide yolks and egg whites, whisk the egg whites with a few tablespoons of sugar. In another bowl, mix the egg yolks with sugar, oil, lemon peel, water, salt and vanilla. Then add the flour and the baking powder, combine the two mixtures and pour into a 24 cm pan. Line with parchment paper forming higher edges. Put in a fan-assisted oven and bake at 165°C (330°F) for 1 hour.
