Chocolate cake: tall and spongy, it will surprise you with every bite!

So unique and decadent, here's a dessert perfect for any occasion!
INGREDIENTS
3 egg yolks
50g (1/4 cup) of sugar
50ml (1/4 cup) of vegetable oil
100ml (1/2 cup) of milk
1 tsp of vanilla extract
Salt
80g (1/2 cup) of flour
20g (2 3/4 tablespoons) of cocoa powder
1/4 tsp of baking soda
1/2 tsp of baking powder
50g (1/4 cup) of sugar

1/2 tsp of lemon (juice)
60g (1/4 cup) of sugar
1/2 tsp of lemon (juice)
60g (1/4 cup) of sugar
40g (1/4 cup) of cornstarch
300ml (1 1/4 cup) of water
200g (1 cup) of sugar
50g (1/2 cup) of cocoa powder
350ml (1 1/2 cup) of evaporated milk
3g (1 tsp) of agar agar powder
150g (3/4 cup) of butter
300ml (1 1/4 cup) of water
200g (1 cup) of sugar
50g (1/2 cup) of cocoa powder
350ml (1 1/2 cup) of evaporated milk
3g (1 tsp) of agar agar powder
150g (3/4 cup) of butter
METHOD
- In a bowl add the egg yolks, sugar, and whisk. Add the vegetable oil, milk, vanilla extract, salt and mix all together.
- Sift the flour, cocoa powder, baking soda, baking powder and mix all together until smooth and well combined.
- In another bowl add the egg whites, lemon juice, sugar and mix with a mixer until the egg whites become firm.
- Gradually add the egg whites to the cocoa mixture and mix them all together well until smooth.
- Add the mixture into the mold and bake at 160°C/320°F for 50 minutes. Let it cool completely.
In another small bowl mix the cornstarch and water. - In a pot add the sugar, cocoa powder, evaporated milk, agar agar powder, and whisk all together well. Transfer the pot to the burner and cook on low heat. Add the cornstarch mixture and cook until the mixture begins to thicken.
- Remove the pot, add the butter, and stir until is well combined
- Cut the cake crust into three equal parts. Add the first part of the cake crust to the plate, add acetate foil around it and start adding the filling. Repeat the procedure for the second and third parts.
- Transfer the cake into the fridge for three hours.
- Once the time elapsed remove the acetate foil and add the filling around the whole cake. Cut it into the parts.
