Fluffy lemon squares: the delicious and fragrant recipe you need to try

Ingredients:
- For the base:
200 g of butter cookies
60 g of butter
- For the lemon filling:
37ml of hot water
3 tsp of powdered gelatin
500 g of cream cheese
375 g of condensed milk
2 lemons
- For the topping:
125 ml of hot water
4 tbsp of powdered sugar
210 g of sugar
Directions:
1. Finely blend biscuits and mix them with melted butter. Then coat the bottom of a cake mold with this mixture.
2. Mix cream cheese and condensed milk. Then add grated lemon zest and lemon juice.
3. Lastly gradually mix in hydrated gelatin.
4. Pour all over the biscuit base and refrigerate until it hardens.
5. Mix water, gelatin and sugar. Stir well.
6. Let sit for 10 minutes then beat with a mixer on high speed for 7. minutes until it's white and fluffy.
8. Coat the cake with this mixture and decorate with grated lemon zest.
9. Refrigerate for 1 hour, cut in squares and serve.
