Lemon squares: the light dessert to try right now!

If you love lemons, this dessert is perfect for you!

INGREDIENTS
For the dough:
2 egg yolks
70g (7 tbsp) sugar
3g (1 tsp) baking powder
80g (4 tbsp) melted butter
lemon zest
200g (1 ½ cup) flour
 
For the cream:
2 egg whites
70g (7 tbsp) sugar
30g (3 tbsp) corn starch
400g (2 cups) greek yogurt
drops of lemon
 
Sugar Powder
Lemon slices
 
METHOD
  1. Separate the eggs. Add egg yolks, sugar, salt and baking powder to the mixing bowl. Whisk well. Add grated lemon and melted butter. Whisk well and add flour.
  2. Knead the dough and divide it in half. Put one half in the fridge and the other in the freezer for 30 minutes.
  3. In another bowl, whisk together the egg whites, sugar, starch, lemon drops and yogurt.
  4. Spread half of the dough from the fridge on the bottom of the mold. Pour over the cream. Grate the other half of the dough on top.
  5. Bake at 360°F/180°C for about 10 minutes and 40 minutes on 280°F/140°C. Cut into cubes and garnish with powdered sugar and lemon slices. Serve.
