Raspberries mousse cake: the dessert that will amaze your guests

Ingredients:
- For the batter:
1 egg
50 g of sugar
40 ml of oil
50 g of flour
1 packet of vanilla sugar (or lemon zest)
1 pinch of salt
- For the mousse:
200 g of raspberries
200 g of cream
50 g of sugar
2 gelatin sheets
- For the coulis:
150-200 g of raspberries
50 g of sugar
Half a lemon juice
2 gelatin sheets
Directions:
1. Whisk eggs with sugar and vanilla sugar. Then add oil, flour and salt.
2. Bake at 180° for 9 minutes. Then let cool.
3. For the mousse: puree the raspberries, then pour in a saucepan.
4. Mix in sugar and bring to a boil.
5. Strain the mixture and add hydrated and squeezed gelatin.
6. Whip the cream, then mix it into the raspberries puree.
7. Pour the mousse on top of the cake.
8. Refrigerate for 1 hour.
9. For the coulis: mix raspberries, sugar and lemon juice in a saucepan.
10. Cook at low heat for a few minutes, then add hydrated and squeezed gelatin.
11. Pour on top of the cake.
12. Refrigerate al least 4 hours, then decorate with whipped cream.
