Veggie rolls: the recipe to a crispy, light and tasty dinner

Ingredients:
1 eggplant
Olive oil
Salt and pepper
Garlic powder
2 bell pepper
1 leek
Sweet paprika
6 phyllo dough sheets
Dried oregano
150 g of grated gouda cheese
Sesame seeds
Directions:
1. Slice eggplant and season with olive oil, salt and garlic powder.
2. Bake at 180° for about 20 minutes.
3. Cut bell peppers in thin stripes, then fry them in a pan with some olive oil.
4. Add leek, too. Season with salt, pepper, paprika and oregano.
5. Cook for 5 minutes over medium heat.
6. Brush phyllo dough with olive oil and fill with the vegetables.
7. Add cheese and close to shape the rolls.
8. Place them in a baking tray, brush theirs surface with olive oil and sprinkle with seeds.
9. Bake at 180° for 25 minutes.
