Christmas crepes cake: the delicious dessert to amaze your guests

Ingredients: 
 
- For the batter: 
2 eggs
2-3 tbsp of sugar
1 tsp of vanilla sugar
1 pinch of salt 
300 ml of milk 
180 g of flour 
20 g of cocoa powder
200 ml of boiling water
2 tbsp of vegetable oil 
 
- For the filling: 
700 g of sour cream or greek yogurt
120-150 g of powdered sugar
1 tsp of vanilla sugar
100 ml of cold water + 15 g of gelatin
250-300 g of canned peaches
150 g of pitted cherries 
 
- For the chocolate icing: 
100 g of chocolate 
15 g of butter
40 g of milk 
 
Directions: 
1. Whisk eggs with sugar, vanilla sugar and salt. Add milk gradually, too. 
2. Sift and stir in dry ingredients: flour and cocoa powder. 
3. Lastly add water and oil. 
4. Cover with some plastic wrap and let sit for 20 minutes. 
5. Make crepes by pouring a spoonful of batter into a hot pan and cook on both sides. 
6. Now make the filling: mix cream, powdered sugar and vanilla sugar. 
7. Hydrate gelatin in cold water, let sit 5 minutes. Then mix into the filling. 
8. Assemble the cake alternating white filling and cocoa crepes. 
9. Make crepes bundles with filling and fruit, then place in the cake. 
10. Refrigerate overnight. 
11. Melt chocolate, butter and milk, then use this mixture to coat the cake.
