Fluffy peach cake: the recipe for a delicate and easy dessert to try

Ingredients:
- For the cake:
4 eggs
100 g of sugar
1 pinch of salt
1 tsp of vanilla sugar or vanilla extract
100 g of flour
- For the filling:
300 g of whipping cream
30 g of powdered sugar
250 g of cream cheese (or mascarpone cheese)
16 g of whipping cream stabilizer (thickener)
200 g of peaches un syrup
- For decoration:
Peaches in syrup
Fresh rosemary sprigs
Powdered sugar
Directions:
1. Mix eggs, sugar and vanilla sugar. Beat using eletrical whisks for 15 minutes.
2. Now stir in sifted flour and mix gently.
3. Pour the batter in a cake mold and bake at 180° for 25-30 minutes.
4. Let cool then cut in 2 equal parts.
5. Fill with peach wedges.
6. Whip cream with powdered sugar and thickener. Add mascarpone cheese and use this mixture to fill the cake.
7. Cover with plastic wrap and refrigerate for at least 4-5 hours.
8. Decorate with more peaches, rosemary sprigs and sprinkle with powdered sugar.
