Potatoes with aioli: the tasty spanish recipe to try

Ingredients:
3 medium-sized potatoes
Salt
1 egg
1 garlic clove
120 ml of sunflower oil
1 tsp of vinegar or lemon juice
Fresh parsley
Directions:
1. Wash potatoes and boil them in salted water for about 25 minutes.
2. Then soak them in cold water and let cool completely.
3. Put egg, garlic, salt and oil in a container and mix using an immersion blender.
4. Add vinegar.
5. Now peel the potatoes and cut them in pieces.
6. Place them in a tray, season with salt and mix with the sauce.
7. Refrigerate for a couple of hours.
8. Serve with chopped fresh parsley.
