No-bake melon cake: the recipe for a delicious dessert perfect for summer days

Ingredients:

- For the base:

80 g of ladyfingers

100 g of milk

20 of mint syrup

- For the mascarpone filling:

200 g of mascarpone cheese

180 g of melon pulp

100 g of powdered sugar

7 g of gelatin sheets

35 g of cold water

100 g of whipping cream

- For the melon gelatin:

180 of melon pulp

20 g of sugar

6 g of gelatin sheets

30 g of cold water

Directions:

1. Mix milk and mint syrup, then dip the biscuits in this mixture.

2. Place them in the bottom of a cake mold to make the cake base.

3. Place in the fridge.

4. Mix mascarpone cheese and powdered sugar in a bowl.

5. Then add melon pulp and hydrated gelatin.

6. Cover with some plastic wrap and let cool in the freezer for 20 minutes.

7. Then add whipped cream a little bit at a time.

8. Pour on top of the biscuit base.

9. Let the cake cool in the fridge for an hour.

10. For the gelatin: divide melon pulp in two parts, add sugar in one and heat it up in the microwave.

11. Add hydrated gelatin too, then mix with the other half of melon pulp.

12. Pour on top of the cake to coat it entirely.

13. Let cool in the freezer for 2/3 hours.

14. Lastly, decorate with diced melon and mint leaves.
