Potato croquettes: how to avoid them breaking and make them savory

Ingredients:
1 kg potatoes
10 g of salt
2 egg yolks
Black pepper
Chopped fresh parsley
Nutmeg
60 g of grated cheese
Breadcrumbs
Seeds oil for frying
Flour
Water
Directions:
1. Boil the potatoes then mash them and place them in a bowl.
2. Add salt, egg yolks, pepper, parsley, nutmeg and cheese.
3. Make the batter by mixing water and flour.
4. Shape the croquettes and dip them in the batter, then coat them with breadcrumbs.
5. Fry in hot oil.
