Almond and coconut tarts: the recipe for some delicious treats

Ingredients:
- For the almond shortcrust pastry:
100 g of powdered sugar
250 g of cake flour
50 g of finely chopped almonds
1 whole egg (at room temperature)
135 g of cold butter
1 packet of vanillin
Half a lemon grated zest
1 pinch of salt
- For the coconut filling:
100 g of room temperature butter
80 g of granulated sugar
100 g of dried coconut
1 pinch of baking powder
1 tsp of vanilla extract or 1 packet of vanillin
Half a lemon grated zest
3 eggs at room temperature
Dark chocolate or jam
Directions:
1. For the shortcrust pastry: mix powdered sugar, flour, almonds, egg, lemon zest, vanillin and salt.
2. Knead until you get a smooth and even dough.
3. Wrap it in some plastic and let rest in fridge for 30 minutes.
4. For the filling: mix butter and sugar, then add coconut, baking powder, vanillin and lemon zest.
5. Aside, whisk eggs using a fork then add them gradually to the coconut mixture.
6. Spread the shortcrust pastry and place it in the molds, then make some holes on the bottom using a fork.
7. Make a chocolate or jam layer on the bottom, then fill with the coconut mixture.
8. Bake in a pre-heated oven at 180° for about 30 minutes.
9. Let cool and serve.
