Veggie fritters: the simple and tasty recipe to try

Ingredients:
- For the fritters:
2 eggplants
1 red bell pepper
1 red onion
2 medium-sized eggs
50 g of chickpea flour
Sweet paprika
Salt and pepper
70-80 g of flour
Frying oil
- For the sauce:
150 g of natural greek yogurt
Half a lemon juice
Salt and pepper
1 garlic clove
Fresh parsley
Extra virgin olive oil
Directions:
1. Peel the eggplants and grate them.
2. Place them in a bowl with 1 tsp of salt, let rest for 10-15 minutes.
3. Dice the bell pepper and onion.
4. Squeeze the eggplants to get rid of excess water.
5. In a bowl mix vegetables, chopped parsley, eggs, chickpea flour, salt, pepper, paprika and flour.
6. Blend well to combine all the ingredients.
7. Shape the fritters and fry them in a pan with vegetable oil.
8. For the sauce just mix yogurt, chopped parsley, salt, pepper, lemon juice, minced garlic and olive oil.
