Eggplant fritters: the recipe to make them soft and savory

Ingredients:
1 eggplant
Half an onion
1 tomato
1 egg
150 g of breadcrumbs
Salt, pepper and sweet paprika
Olive oil
Directions:
1. Make some holes into the eggplants using a fork.
2. Put it on a stove and roast it on all sides.
3. Place it in a plastic food bag and let rest for 10 minutes.
4. Remove the peel, then chop the inside of the eggplant.
5. Finely chop tomato (after getting rid of the seeds), onion and parsley too.
6. Move everything inside a bowl and stir in egg and breadcrumbs.
7. Season with salt, pepper and sweet paprika.
8. Mix to make a firm dough.
9. With oiled hands make some patties.
10. Fry them in a pan with some olive oil, or bake them at 180 degrees for 30-35 minutes.
