INGREDIENTS
700g of zucchini
Salt
Pepper
1/2 tbsp of minced garlic
Dry oregano
3 eggs
30g (1/4 cup) of flour
1 tomato
90g of mozzarella

METHOD

Grate the zucchini and transfer it to the bowl. Add the salt, pepper, minced garlic, oregano, eggs, flour and mix well together.
Pour the mixture into the pan and level it up with the spatula. Cover with lid and cook for 6 minutes on low heat.
After 6 minutes turn to the other side and start arranging tomato slices and mozzarella cheese on top of them. Cover with lid and cook 3 more minutes or until the mozzarella is melted and serve.
