Bell pepper rolls: the simple way to make a tasty meal

Ingredients:
1 Eggplant
5 Peppers
Olive oil
1 onion
Potatoes 400g
Butter 20g
Mozzarella cheese 100g
Parmesan 60g
Parsley
Salt and pepper
Bread crumbs
Directions:
1. Arrange the peppers on the baking sheet and bake at 200 ° for 25-30 minutes.
2. Fry the onion and add the aubergines, season and cook.
3. Cut the potatoes, boil them and mash them.
4. Mix the potatoes with butter, eggplant, parmesan, parsley, salt and pepper.
5. Stuff the peppers and roll them up.
6. Arrange them in a baking dish and cover with Parmesan and breadcrumbs.
7. Bake at 180° for 20 minutes.
