Pistachio mousse cake: the recipe for a creamy and delicious dessert

Ingredients:
- For the cocoa biscuit:
1 egg
30 g of sugar
30 g of cake flour
15 g of almond flour
10 g of cocoa powder
2 g of baking powder
25 g of milk
28 g of seeds oil
- For the pistachio mousse:
2 egg yolks
50 g of brown sugar
120 g of warm milk
120 g of white chocolate
40 g of pistachio paste
4 g of gelatin sheets
20 g of cold water
200 g of whipping cream
10 g of granulated sugar
- For the pistachio ganache:
60 g of hot whipping cream
50 g of white chocolate
15 g of pistachio paste
7 g of butter
Directions:
1. Whisk eggs with sugar and a pinch of salt.
2. Also mix in milk an oil. Then sift and stir in flours and cocoa powder.
3. Pour the batter into a mold (16 cm diameter) and bake in a pre-heated oven at 170 degrees for 20 minutes.
4. Now make the mousse. First, soak the gelatin sheets in cold water.
5. In a saucepan mix yolks, brown sugar and a pinch of salt. Then add milk. Cook the cream on the stove.
6. Aside, mix white chocolate, hydrated gelatin, pistachio paste, a pinch of salt and the cream you made before.
7. Stir well to blend all the ingredients, then cover with some plastic wrap and let cool in the fridge for 15 to 20 minutes.
8. Whip the cream with sugar and mix it with the now cold pistachio mousse.
9. Assemble the cake, placing the cocoa biscuit on the bottom and wetting it with some coffee, then cover with a thick layer of pistachio mousse.
10. Let cool in the freezer for 3 hours.
11. Now make the ganache mixing white chocolate, hot cream and pistachio paste. Lastly add and melt butter in it.
12. Use this ganache to refine the cake's surface and decorate the edges with some chopped pistachios.
