Twice baked cake: an easy recipe to try now!

Here's an incredible method to make a fluffy cake with a creamy center! 

INGREDIENTS
3 eggs;
250 g (1 ¼ cup) sugar;
125 g (½ cups) yogurt;
125 ml (½ cup) milk;
125 ml (½ cup) vegetable oil;
380 g (3 cups) all-purpose flour;
16 g (1 ⅛ tbsp) baking powder;
350 g (1 ½ cup) apricot jam;
Powdered sugar for dusting.
METHOD
  1. Whisk sugar with eggs, milk, yogurt and vegetable oil until pale.
  2. Separately combine all-purpose flour with baking powder.
    Add dry ingredients into the egg base and whisk until smooth batter forms.
  3. Pour half of the batter into a round baking pan, covered with parchment.
  4. Bake at 180C/350F for 30 minutes.
  5. Pour jam on top of the cake and spread out evenly. Cover the jam layer with leftover batter and bake for 30 minutes more or until fully done.
  6. Set aside to cool down completely, then serve dusted with powdered sugar.
