Twice baked cake: an easy recipe to try now!

Here's an incredible method to make a fluffy cake with a creamy center!
INGREDIENTS

3 eggs;
250 g (1 ¼ cup) sugar;
125 g (½ cups) yogurt;
125 ml (½ cup) milk;
125 ml (½ cup) vegetable oil;
380 g (3 cups) all-purpose flour;
16 g (1 ⅛ tbsp) baking powder;
350 g (1 ½ cup) apricot jam;
Powdered sugar for dusting.
250 g (1 ¼ cup) sugar;

125 ml (½ cup) milk;
125 ml (½ cup) vegetable oil;
380 g (3 cups) all-purpose flour;
16 g (1 ⅛ tbsp) baking powder;
350 g (1 ½ cup) apricot jam;
Powdered sugar for dusting.
METHOD
- Whisk sugar with eggs, milk, yogurt and vegetable oil until pale.
- Separately combine all-purpose flour with baking powder.
Add dry ingredients into the egg base and whisk until smooth batter forms. - Pour half of the batter into a round baking pan, covered with parchment.
- Bake at 180C/350F for 30 minutes.
- Pour jam on top of the cake and spread out evenly. Cover the jam layer with leftover batter and bake for 30 minutes more or until fully done.
- Set aside to cool down completely, then serve dusted with powdered sugar.
