Homemade croissants: the recipe to make them fluffy and fragrant

Ingredients: 
370 g of Manitoba flour
40 g of granulated sugar 
3,5g of dry brewer's yeast or half a cube of fresh brewer's yeast 
190 g of cold milk 
1 tbsp o vanilla extract or half a packet of vanillin 
Orange zest 
7 g of salt 
40 + 150 g of butter 
 
Directions: 
1. Mix flour, sugar, yeast, milk, orange zest and vanilla in a large bowl. 
2. Knead for a minute then add salt. 
3. Knead for 10 minutes. 
4. Add butter one piece at the time. 
5. When the dough is solid make a ball out of it. 
6. Move the dough in a bowl and cover. 
7. Let it rest in the fridge for 12 hours. 
8. Now spread the dough making a rectangular shape, place it on a baking tray covered in baking paper, cover and let it cool in the freezer for 20 minutes. 
9. Coat the butter in baking paper and spread it using a rolling pin to form a rectangle. 
10. Place the butter in the middle of the dough and spread it. Let rest in the freezer for 30 minutes. 
11. Repeat this process 3 times. 
12. Spread the dough again and with a pizzacutter or a knife make some triangles. 
13. Roll them to make the typical croissant shape. 
14. Cover the croissant and let them rise for 2/3 hours. 
15. Brush their surface with some whipped egg. 
16. Bake in a pre-heated oven at 180 degrees for 25/30 minutes. 
17. THE HACK: if you already made the dough but you don't wat to eat the croissant right after, you can freeze them in a freezer bag.
