Lemon custard cookies: the simple, creamy and delicious recipe

Ingredients:
Lemon custard:
2 whole eggs
100 g sugar
Lemon peel
100 g lemon juice
80 g butter
2 g gelatin sheet
10 g cold water
Shortcrust pastry:
200 g butter
270 g all purpose flour
100 g sugar
Lemon peel
Directions:
1. Lemon custard: mix the sugar with grated lemon peel. Melt the gelatin in the cold water. In a pot mix the eggs with sugar and lemon peel, lemon juice, butter and gelatin.
2. Heat the mixture and make the custard. Let it cool for about 20 minutes.
3. Shortcrust pastry: Mix the butter with flour, sugar and lemon peel. Make a dough and divide it in two parts. Spread each one and place them in the refrigerator for 1 hour.
4. Then cut the cookies and bake the at 170° for 15/17 minutes.
5. Fill them with custard and enjoy.
